Recipe of the week

So, tonight I tried my new recipe(s) of the week: Meatloaf muffins and cauliflower mashed potatoes.  I have two meatloaf recipes that I alternate between and this new meatloaf recipe became Ryan’s new favorite.  Olivia only took one bite of it, but that is nothing new.  The cauliflower mashed potatoes received mixed reviews.  They looked like mashed potatoes, smelled like mashed potatoes, but still had a cauliflower taste.  I really dislike cauliflower, however, I did not think they were all that bad.  Super healthy and way more diabetic friendly than mashed potatoes.  So, I’ll probably make them again.

Next week?  A new tilapia recipe.  With only 2.6 g of carbs and 23 g of protein, it’s a diabetic’s perfect food.

I used to love grilled tilapia until one very bleak day when Kris cleaned out the deep freeze and accidentally forgot to put some back inside when he was finished. He left on a business trip, and the stinch got so bad in the house that I couldn't stand to even be at home! I tore the house apart looking for that nasty smell, but couldn't find it. Of course, he found it AFTER he come home a week later. Never have I wished that I could see the top of our deep freeze as much as I did then! Since then, I just haven't been able to bring myself to eat it.

Let me know how the new recipe comes out. Maybe I'll give it a go again. :-)
