My husband and I are going on a high protein/fiber/vegetable/low carb diet. I'm doing it because of my diabetes diagnosis and he is doing it just to be healthy and supportive. We've found a way to include some sort of vegetable with every meal. Broccoli slaw is delicious and I even leave out the sugar! Ryan very much dislikes peas and I very much dislike cucumbers, so we made it deal. He'll eat peas if I eat cucumbers. Last night, we split a cucumber and I found that if I completely soak the cucumber in balsamic vinaigrette. . .it doesn't taste too bad. I ate my entire half! I'm becoming addicted to salads. . .which is good. I gave up soda, but that makes me enjoy my iced tea that much more (I love Starbucks shaken iced tea.) I haven't had a single headache since changing my diet! I thought I was going to be referred to a dietician, but now I'm being referred to an endocrinologist. I don't want any more tests or medications or supplements or referrals. . .I just want to get on with it and feel better, ya know? I'll give 10 points to anyone who submits a recipe that I can use. . .especially with vegetables or beans. You'll get an extra 5 points if I enjoy it! LOL.

Sounds like Atkins diet might help you, I followed it years ago and found several good recipes/ideas online, maybe searching for Atkins recipes might help you out. Glad that you found out what's wrong and hope that your diet goes well and that you keep feeling better!

I know this post is a few days old -but I wanted to pass along this recipe to you.
Classic Sausage and Pepper Grill:
Yield: 5 servings (serving size: 2 ounces turkey sausage and 1 cup bell pepper mixture)
Ingredients
Cooking spray
1 pound red potatoes, quartered
5 garlic cloves
1/4 teaspoon salt, divided
1/4 teaspoon black pepper, divided
1 red onion, peeled and cut in half crosswise
4 red bell peppers, quartered
2 yellow bell peppers, quartered
5 (3-ounce) turkey Italian sausage links
2 tablespoons chopped fresh parsley
1 tablespoon minced fresh oregano
Preparation
Prepare grill. Coat the grill rack with cooking spray.
Cut an 18 x 12-inch sheet of heavy-duty foil. Place potatoes and garlic in center of foil; sprinkle with 1/8 teaspoon salt and 1/8 teaspoon black pepper. Fold foil over vegetables, tightly sealing edges. Add foil pouch to grill rack. Grill 30 minutes, turning foil pouch occasionally.
Lightly coat onion and bell peppers with cooking spray; sprinkle with 1/8 teaspoon salt and 1/8 teaspoon black pepper. Place onion on grill rack; grill 15 minutes. Turn onion over; add bell peppers and sausage. Grill an additional 15 minutes or until vegetables are tender and sausage is done; turn occasionally. Remove from grill.
Slice bell peppers into strips; coarsely chop onion. Combine bell peppers, onion, and potatoes in a large bowl. Squeeze garlic cloves into a small bowl to extract garlic pulp, and discard skins. Add parsley and oregano, tossing well. Slice grilled sausage links into 1/2-inch-thick slices, and serve with bell pepper mixture.

I have a fantastic pancake recipe that I use, that I make for my diabetic friends (really). You could be creative about what you top it with (I know the orange sauce has a lot fewer carbs than syrup, but maybe diabetic jam would better?), but I know the pancakes themselves are perfect for you. And... I happen to think they are a lot more delicious than traditional pancakes.
